Banana and Butterscotch Pudding

My cousin Lia and I were looking for a simple easy dessert to make after dinner one night. She took out Bill Granger's cookbook Simply Bill. We found a recipe for Banana and Butterscotch Pudding. If you want a rich dessert for a cold winters day then I suggest you try it. I forgot to take a photo so I thought I would borrow a photo from the lifestyle food channel. ehhehe...



BANANA AND BUTTERSCOTCH PUDDING


INGREDIENTS
Pudding

125 g Plain Flour
A pinch of salt
115 g caster sugar superfine
3 teaspoons baking powder
1 Banana mashed (we added 2 bananas because they were small)
250 ml Milk
85 g unsalted Butter melted
1 Egg lightly beaten
1 teaspoon vanilla extract

Topping
140 g soft brown sugar
¼ cup Golden Syrup (try using treacle it works just as well)
250 ml boiling Water

Method (Pudding)
Preheat the oven to 180°C (350°F/Gas 4). Sift the flour, salt, sugar, baking and powder into a bowl. Add the banana milk, butter, egg and vanilla extract and whisk together until well combined. Pour into a greased 2.5 L baking dish.

Method (Topping)
To make the topping, place the brown sugar, golden syrup or treacle and water in a small pot and bring to a boil. Pour the boiling mixture carefully over the pudding, then bake for 30 - 40 minutes or until cooked through when tested with a skewer.

Serve with Vanilla Ice cream or Double Cream.. Its best eaten hot..
