Mama Eugenio's Salisbury Steak with Mushroom Sauce

My mum is a pretty darn good cook. She specialises in Filipino dishes and desserts but on occasion she makes different food but gives it the Mama Eugenio twist. Here is her recipe for Salisbury Steak, its family favourite...


MAMA EUGENIO’S SALISBURY STEAK WITH MUSHROOM SAUCE

Ingredients

Salisbury Steak
½ kilo ground premium beef mince
½ kilo pork mince
1 egg
1 diced medium onion
¼ cup grated Havarti cheese
¼ cup breadcrumbs
Pinch of salt and pepper

Mushroom Sauce
1 tablespoon of butter
2 cups sliced button mushrooms
1 to 2 can of Campbell’s mushroom soup
¼ cup milk
Pinch of salt and pepper to taste

Method Salisbury Steak
Mix beef, pork, egg, diced onion and salt and pepper together. In a separate bowl mix breadcrumbs and grated Havarti cheese. Combine the two and mix by hand (it’s the best tool in cooking). Set aside for 5 minutes. After 5 minutes shape into patties and brown in the pan till medium. Allow the patties to rest while you cook the mushroom sauce.

Method Mushroom Sauce
Fry mushrooms in butter until soft. Add mushroom soup and milk. Mix through. Add cooked patties to the sauce and allow to simmer for 6 minutes. Add a pinch of salt and pepper to taste.
This is really nice served with crusty bread or mash…

Hi Trissa.. You can register your details on the RSPCA cupcake day website. They will send you a pack with some posters and balloons. You can then become a cupcake cook and sell your sweet treats.. I'm planning to take a few cupcakes to work so I can sell them for the RSPCA. Its a great cause. I'm a big pet lover.
